    EASY Raspberry Chocolate Cheesecake

    If you are interested in making a dessert that is quick and easy but tastes so good everyone will think you spent all day in the kitchen, then this Raspberry Chocolate Cheesecake is for you.   My friend Purvi gave me this recipe and while I don't have much of a sweet tooth I absolutely cannot resist this sinfully delicious and decadent cheesecake.  The cheesecake is smooth and rich and it just melts in your mouth. This is the third time I have made the cheesecake this month and lucky for me I had a little helper this time around.

     

    Easy Raspberry Chocolate Cheesecake

    Ingredients

    Ready made chocolate crust (Keebler)
    6 oz cream cheese (I let it sit out for 20 minutes first)
    1 can condensed milk (14oz)
    3 tsp lemon juice
    1 egg
    1 tsp vanilla
    Fresh raspberries
     

    Directions

    1. Arrange berries on crust

    2. Beat cream cheese till fluffy and then add milk. Beat again and then add lemon juice, egg and vanilla.

    3. Beat and pour over berries.

    4. Bake at 350 for about 30 minutes

    5. Let it cool and then spread glaze on. Chill for two hours.

    Glaze

    Two squares of bakers semisweet chocolate ( 2 oz)
    1/4 cup of whipping cream.
    Melt over low heat until smooth

    I don't really care for raspberries but when paired with chocolate, that soon changes! This looks so good.

    I love seeing your daughter cooking with you. When I was growing up, my mother and I spent every Sunday baking. Very happy memories which I'm sure your little one will also reflect on when she's older.
